Honey Roasted Potatoes


  • 1 lb. red potatoes, quartered

  • 1/4 cup butter, melted

  • 1/4 cup honey

  • 2 tsp. dry mustard

  • Salt and pepper, to taste

  • 1/2 cup bacon bits

  • Fresh parsley


Preheat oven to 400 degrees.

Place potatoes in large pot and cover with water.

Bring to boil, reduce heat and simmer potatoes until just cooked, 15 to 20 minutes.

Drain well.

Coat 9″ x 13″ baking dish with nonstick cooking spray.

In a single layer, place potatoes in dish.

Combine melted butter, honey, mustard, salt and pepper in a small bowl.

Drizzle over potatoes.

Bake for 5 to 10 minutes, stir well and bake again for another 5 to 10 minutes.

Sprinkle with bacon bits and parsley.
