Honey Mint Dressing

YIELD: 10 - 12 servings


  • 1/2 cup orange blossom honey

  • 1 cup white wine vinegar

  • 2 cups olive oil

  • 1/2 cup extra-virgin olive oil

  • 1/4 cup fresh mint, finely chopped

  • 3 scallions, thinly sliced

  • Salt and pepper to taste


Combine honey, vinegar, mint and scallions in a bowl.

Whisk in olive oil and extra-virgin olive oil until emulsified.

Add salt and pepper to taste.

Excellent for hearty lettuces with fruit, nuts and cheese or as a marinade for chicken and shrimp.
